Fancy Grilled Cheeses 
*recipe idea adapted from here

*we used all organic 

Sweet Potato
Raw Sharp Cheddar Cheese
Coconut Oil
Italian Seasoning 
Garlic Powder 
Artisan Baked Honey Wheat Bread...which we got from the Rutland Farmers Market on Saturday 
Salt & Pepper to Taste 


Saute pressed garlic in olive oil in a separate pan or small pot, set aside.
Coat one side of each slice of bread with coconut oil (coconut oil when left out will typically stay a solid, unless it is too hot, this makes it super easy to spread).
Mash cooked sweet potatoes into a spreadable consistency with a little olive oil or coconut oil (you can add what ever spices you desire here too, we stuck with salt & pepper).
Spread the Sweet Potato along one side of the bread.
On the other side of the bread brush the sauteed garlic & oil.
Add Cheddar Cheese (shredded or sliced thin).
Press the two pieces of bread into a sandwich, sprinkle both sides with  italian seasoning & garlic powder, and begin to grill.
Once cooked to your liking remove from the pan open the sandwich, add the spinach 
(you can add the spinach before you grill as well, I just prefer mine raw) then close it back up & enjoy!
