iced pumpkin oatmeal cookies

Ingredients
*I used all organic
2 cups flour
2 cups rolled oats
1 cup pumpkin puree (I used the puree from the pumpkin I wrote about here)
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup oil of choice, I used coconut
1/2 cup organic local honey (maple syrup would work too)
1 large brown egg
1 1/2 teaspoons cinnamon
1 teaspoon nutmeg
1 teaspoon vanilla extract
1/2 cup hemp seed
1 cup powder sugar
Directions
Preheat oven to 375
In a large mixing bowl whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, & salt
In a small bowl whisk together the oil & honey until smooth, & then mix in the egg, pumpkin, & vanilla
Add the wet ingredients to the dry, stir to combine, add the oats, & hemp seed, stir until all is well mixed
Drop the batter on the the baking sheet in spoonfuls about two inches apart
Bake for 18-20 minutes
Cool the cookies on a wire rack
Once the cookies are cool make the frosting by combining the powder sugar with water until you reach a icing consistency, then dip the top of the cookies into the icing & place back on the rack to harder
