meal - breakfast zucchini bread

*all organic, makes 2 loafs, & recipe adapted from here

3 eggs 
1 cup oil - I used coconut 
2.5 cups sugar 
4-5 cup grated zucchini 
1 generous teaspoon vanilla extract
3 cups of flour 
3 tsp cinnamon 
Pinch of freshly grated nutmeg 
1 teaspoon baking soda 
1/2 teaspoon baking powder 
1 teaspoon salt 
1/2 cup Semi-Sweet Chocolate Chips 
1 cup Pecans  


Preheat oven to 350 degrees. Take two bowls. Whisk the eggs in a separate bowl lightly, then add the oil, sugar and grated zucchini. In another bowl, mix together the flour, vanilla, cinnamon, nutmeg, baking soda, baking powder, and salt. Mix the dry and wet ingredients together. I then divided the mixture into two pans & added chocolate chips to one & pecans to the other. Pour mixture into a greased and floured loaf pan, place into the oven, & bake for 50-60 minutes, or until the bread has browned & if poked with a stick it comes out dry. If you're going to make muffins, bake for about 20 to 25 minutes. *I also sprinkled brown sugar on the top of the bread half way thorough baking.
