spicy dark chocolate & cinnamon cookies

*All organic 

1 stick unsalted butter softened
1 cup dark brown sugar
2 eggs
1 tbsp vanilla
2 tsp baking powder
1 tsp ghost pepper salt - we use this one
1/2 tsp cayenne pepper
1/2 tsp cinnamon
1/2 cup cocoa powder - we used this one
1 1/4 cup pastry flour - we used this one
1 cup dark chocolate chips, plus about 1/4 cup for topping


Preheat oven to 350 degrees F
Cream together the butter & brown sugar
Add the eggs one at a time
Add vanilla
In a separate bowl whisk together the baking powder, salt, cayenne pepper, cinnamon, cocoa powder, & flour
Slowly mix the dry ingredients into the other mixture until incorporated, do not over mix
Fold in the chocolate chips
Line your baking medium with parchment paper
Scoop large mounds of the dough onto the baking medium & top each with a few chocolate chips
Bake for 8-10 minutes, until the edges are set & the middle remains slightly unbaked. Allow to cool for 5 minutes before removing.
